Spinach and Heart of Palm Dip

Full disclosure: I just bought 3 large cans of hearts of palms from Costco and I have gone through 2 already. Costco sized cans. 2 down. Bought Saturday. I have a problem: I love hearts of palm but I usually binge and then get sick of them for a few months. This has not happened yet. In fact, I decided that today would be a good day to make this dip because it sounded delicious.

Fuller disclosure: I used my leftover spinach from John Howie, which was sauteed with garlic and preserved lemon. Waste not, want not.

Need:
hearts of palm, coarsely chopped
spinach, sauteed with garlic and coarsely chopped
roasted head of garlic
2 tbsp mayo
2 tbsp sour cream
feta
parmesan cheese
black pepper

 
These are hearts of palm. They have an artichoke heart texture but are tastier. A little more tangy. Delicious right out of the can.... I'm gonna go grab one more now, be back soon...

 
...**crunch**crunch** Mix together spinach, hearts of palm, mayo, sour cream, roasted garlic, feta, and black pepper. The mayo and feta lend enough salt so that its not necessary to add more.

 
Put it in a baking dish and top with parmesan cheese. I only have small ramekins. Perfect for individual servings so that I don't get out of hand, which I have a tendency to do.

 
Eat with chips, or crostini, or crudites (fancy food word for chopped up vegetables). I just ate this and already I'm thinking about cracking into another ramekin. What is wrong with me???!
