Hummus and Flautas

A lot of what I cook is what is in my fridge/pantry. I was feeling a fiesta coming on this evening, but all I had was a chicken breast in the freezer and a couple of tortillas. Not too many fixin's. It came to me suddenly, like a sudden urge to run to the restroom after Mexican food (foreshadowing?): I had a can of garbanzo beans in the pantry. Beans. Frijoles. Ah sí. This will work.

Need:
garbanzo beans
lemon juice
salt
paprika
olive oil
2 cloves of garlic

Flautas:
chicken
tortillas
hummus
oil for frying
minced yellow onion
s+p

 
Put all hummus ingredients in a food processor and process, adding olive oil in as it goes until you get the right consistency.

Boil chicken breast and chop it up.

 
Add a heaping tablespoon of the hummus, some minced onions, and s+p. Mix well.

 
Wrap tortillas in plastic wrap and microwave for 30 sec - 1min until they are pliable. Place chicken/hummus onto tortilla and roll.

 
Seam side down.

 
Place in hot oil **gently** and seam side down so that you don't burn yourself.

 
Turn.

 
Serve. Mira que bonita ¿no? How did those hearts of palms get on my plate??! Yes, that's Pace picante Hot sauce. Its good. Don't judge.
