Mashed "Potatoes" and Roasted Cauliflower

I tried to deceive the children with mashed "potatoes" substituting cauliflower to see if I could get them to eat it. The 1-year old ate it and smeared it all over her face and hair. The 3-year old declared that it was gross. He is currently complaining that his "cozy coupe" has no power steering. Seriously. 3 going on 16.

Anyway, I also made some roasted cauliflower for myself. He definitely wanted nothing to do with that.

Roasted Cauliflower - rub down with olive oil, season and roast for 20 min at 375°
olive oil
s+p

Roasted Cauliflower dressing - chop olives, mix all together, drizzle on roasted cauliflower
olives
olive oil
red wine vinegar
black pepper

Mashed "Potatoes"
boiled cauliflower florets
sour cream or cream cheese (cream cheese tastes better, I had sour cream today)
garlic
s+p (I used white pepper today)
parmesan cheese
a little milk

 
Boil florets in salted water.

 
Add to food processor with sour cream, milk, s+p, garlic, and parmesan cheese

 
Looks like mashed potatoes, don't it?

  1. Sarah and I had the broccoli/cauliflower debate. For some reason her tongue doesn't work and she thinks that cauliflower isn't disgusting. I would be really disappointed if I thought that I was going to eat mashed potatoes, one of the greatest foods, and it ended up being cauliflower.

  2. Joe: As you can see, she did it with the whiskey soy chicken; enough whiskey and cauliflower gets pretty darn edible. And that preperation is perhaps the best way to have cauliflower anyway, so its not so bad.

    But, perhaps there is something to be said for potatos, too...
