Okay, so the real recipe here is the slaw that I made to go with the fish tacos. The fish I used was the panko crusted tilapia filets from Costco (just follow directions for heating) and the tortillas were corn and already made (just wrapped up and heated when the fish was ready). The slaw was insanely delicious with the fish tacos and was super tart, which I love. There are a bunch of different things I could have done with it, if I had different ingredients. If I'd had fresh serrano or jalapeno peppers, I would have chopped those up and added them. If I'd had pickled jalapeno peppers, I would have added the juice from the jar and some chopped up jalapeno from there. Lots of things that could have been done to get a very similar, delicious result.
Need:
Finely chopped cabbage (I had savoy)
Finely sliced white onion
Chopped green onion
mayonnaise (sour cream would've worked too)
s+p
juice of 1/4 of a lemon
minced pickled pepperoncini and some of the juice
Chop up the vegetables and add them to a bowl.
Add s+p, lemon juice, pickle juice from pepperoncinis and mayo. Toss to coat.
See? Heat tortillas and fish, then I added a slice of avocado and the slaw on top. I had some really delicious hot sauce that I added that had a slightly fruity quality. Sooooooooo. Goooooooooood.
Proof.
We're big fans of fish tacos with breaded fish fillets. We use trader joes fish nuggets because they are cheap.
