Ceviche

So I've been craving for one of my favorite snacks of all time: Ceviche. Its lime, its seafood, its chopped veggies and its delicious. This is a Mexican style one, with lots of chopped vegetables. In South America, its more focused on the fish, fyi.

Need:
chopped shrimp (you can also use a nice, white fish. I like catfish)
chopped scallops (just because I had some, not necessary)
chopped carrots
chopped onions
chopped tomatoes
chopped cucumber
chopped jalapeno pepper
cubed avocado
lots of limes
salt
Tapatio hot sauce

 
Put all chopped everything in a bowl.

 
Squeeze lime juice into said bowl. Get a lime squeezer, they're great. But please don't spend $20 on one at Williams Sonoma. You can get a good one for about $2 at a Mexican grocery store.

 
Add your seafood, salt, and Tapatio.

 
Stir and let sit in the fridge for at least an hour, but overnight is best. Stir occasionally.
The citrus juice cooks the seafood. Enjoy with corn chips.
