Blue Cheese Bacon Pizza

Okay, so make your pizza dough, then here are the toppings that I did tonight:

White sauce:
butter (I used rendered bacon fat today)
1 tbsp of flour
1/2 tsp garlic powder
2 tbsp parmesan cheese
some milk

Caramelized Onions:
sliced white onions
1 tbsp of red wine vinegar
a splash of red wine
s+p

Other Pizza Toppings:
chopped, cooked bacon
chopped chicken
chopped mushrooms
blue cheese (I had some slices of white cheddar/blue cheese we've been meaning to eat)

 
Add chopped onions to a small pan with some oil on very low heat. Add the red wine vinegar and cover.

 
Chopped, cooked bacon. Mmmm... bacon....

 
Chopped mushrooms. My son chopped these and took this picture. He does not eat the mushrooms, sadly.

 
About halfway through, the onions start to turn translucent. Add some s+p at this point, stir and cover.

 
Add flour to your fat and make a light roux.

 
Bacon fat roux, baby.

 
Add some milk and garlic powder, then parmesan cheese. When it boils, take it off of the heat because it thickens quickly. If it gets too thick, add a little more milk, off the heat, and stir.

 
Sauce consistency I wanted.

 
Assemble pizza with bacon, chicken, mushrooms, caramelized onions, and blue cheese. Only half the pizza gets vegetables because the kids flip out. Sprinkle a little parmesan cheese over everything and throw it in the oven.

 
Bake at 425° for 20 minutes.
